Ingredients required to make chickpea biryani

1 Cup Kabuli chana chickpeas (thoroughly washed and soaked overnight)
Salt to teste
1/4 tsp soda

Ingredients required for marination

  • 1 cup curd
  • French beans 1/2 cup
  • Finely chopped curry leaves/coriander leaves 1 cup
  • 1 tomato finely chopped
  • Green chili finely chopped
  • 1 tsp shezwan chutney
  • Ghee 1/2 tsp
  • Biryani masala
  • Coriander powder
  • Garam masala
  • Turmeric powder
  • Kevda water
  • Rose water
  • Saffron milk
  • Bay leaf
  • Red chili powder
  • Cumin seeds
  • Ginger chopped
  • Garlic finely chopped
  • Onion 2 finely chopped
  • Rice 2 cups
  • Whole Spices
  • Barista (brown onion)
  • Pomegranate
  • Spring onions

How to make chickpea biryani

Boil the pressure cooker by adding salt and soda to the soaked chickpeas. Allow cooking for about 3 whistles. When the pressure drops, flip the chickpeas into a large bowl. Now when we get a little cold, we will do their marination.

Add chickpeas and mix well by adding 1 cup curd. Now add chopped curry tomatoes and finely chopped French beans. Add schezwan chutney and biryani masala and stir lightly. And finally, put rose water and kevda water and ghee and keep it for 30 minutes for marination.

Rice preparation for biryani

Now we will boil the basmati rice with water in a big pot. To make basmati rice blossom and white, squeeze 1/2 lemon juice. Add some whole spices and ghee while boiling the rice. Cook the rice to about 80%. When the rice reaches this stage, sieve with the help of cracked cotton or cotton cloth. And immediately spread it in a bowl. So that the rice does not crush under pressure.

Now to cook the marinated chickpeas, heat ghee in a vessel, and chop finely chopped ginger, garlic cumin, and bay leaves. After 1/2 min, mix finely chopped onions and sleep. When the onion color is golden, add marinated chickpeas. And cook for about 5 min. Now mix coconut milk or fresh milk in it and cook till the gravy is dry. When the gravy is dry, reduce the flame completely and leave the pot on its own. And put a layer of rice.

Method of suppressing Biryani with coal smoke

Cover the rice with freshly chopped curry leaves, spring onion, and pomegranate seeds. You can serve Biryani on this stage too. Or to give a more aromatic smokey flavor to the biryani, put burning coal in a clay pot and place it in the middle of the pot of biryani. Then drip a few drops of desi ghee over the coal and cover it. This will make your biryani very tasty and its smokey fragrance will spread far and wide. And you will not be saved from its greed.
